What Caviar is
A quick word on Caviar
Caviar started in 2012 as a more selective delivery service, built for restaurants that did not want to sit in a list of a thousand others. Square bought it in 2014, and DoorDash bought it from Square in 2019.
Today it runs on DoorDash's network. The curation is still there. So is the commission structure underneath it — a nicer shop window does not change what the restaurant pays to stand in it.
